The delightful end to a long day!!!

I know the feeling…. It’s been a long day at work, the kids are cranky, and you haven’t had time to go grocery shopping…

Here are some easy and simple cooking solutions to end your long day with delight. You can include your kids and make it a fun adventure.

Use your microwave to make a simple scrumptious impromptu meal….

  • What about an omelet sandwich???? It can be ready in 5 minutes! All you need is one egg and one other ingredient. My suggestion is to use leftovers from earlier in the week, i.e., ham, grated cheese, green onion, herbs, spinach, a spoon of jarred pesto, salsa, tomato sauce. *Note: you can use egg whites if you prefer. **Note: I always have a dozen eggs and grated cheese in the fridge as well as a loaf of sliced bread in the freezer on hand.

  • Use whatever ingredients that are appealing to you and your family and need to be eaten.

  • Keep left-overs of soups, stews and pasta sauce in the freezer. These will give you other options on days you’re not feeling inspired to cook. Quickly defrost and add a quick side, like salad or rice. An easy and delicious meal in under 15 minutes!

  • If you don’t have anything fresh, check the freezer or just use salt, pepper and dried herbs!

    • Microwave the egg in a shallow bowl for 1 min. Serve on toast. Enjoy!

    • If you have salad ingredients on hand… add a salad.

I have had wonderful experiences at the end of a long day when I encourage my children to join in on the cooking, no matter how simple the meal is. It will distract them… the result will be delightful!!
